Defence of a PhD thesis on the problems of spoilage in salmon and shrimp

Sabrina MACE defended her PhD thesis in Food Microbiology and Molecular Biology in 2013 at Oniris (Nantes) under the auspices of LUNAM (the University of Nantes Angers Le Mans). She took part in the regional research programme MIPROMER and in the French National Research Agency programme ECOBIOPRO during which she became interested in the spoilage bacteria of fresh salmon and cooked tropical shrimp (including methods of controlling them via bio-preservation).

Publication of a book summarizing information about the bio-preservation of food products

Bio-preservation is an innovative concept which has already proved its value in a number of industrial applications, but whose potential has yet to be fully exploited. This book identifies the research carried out on this subject, with reference to both existing and future applications. Legal professionals are considering the current regulations.
