Bio-preservation is a method of preserving food by adding lactic acid bacteria ferments to fresh or cooked products, either vacuum-packed or packed under a modified atmosphere.

The protective lactic acid bacteria ferments can ensure or extend the shelf life by inhibiting the growth of spoilage bacteria (coliforms, Pseudomonas, other lactic acid bacteria, histamine-producing bacteria) or certain pathogens (Listeria monocytogenes).

Biocéane provides a range of non-genetically modified bio-protective ferments, including the ferment LLO, specially selected for the preservation of seafood, and the SURPROTEC ferments, more suitable for cooked meat products and charcuterie.
